Red Lentil Soup
1lb Dry Red Lentils
4 Cups of Chicken Stock (Unsalted)
5 Stalks of Celery
2 Garlic Cloves (Minced)
1 Small Red Onion (Diced)
2 Tablespoons Olive Oil
1 Tablespoon of Red Curry Pepper Paste
1 Teaspoon of Garlic Powder
Soak lentils in water for a couple of hours
In a large pot or Dutch oven bring chicken stock to a boil add the olive oil and salt and pepper with a dash of garlic power
add the soaked red lentils to the boiling stock and add a cup of water
Add carrots and celery and garlic, onion
Simmer on medium heat for a couple of hours
Add the tablespoon of red curry paste and stir well
Pour soup over top of healthy quinoa or brown rice
Top with arugula or your favorite salad and a poached egg and enjoy!
